Ricotte
Cottage cheese (ricotta) is a product obtained by warming the residual whey from cheese making, a process that is, still today, entirely manual. Depending on the aging time, salting and size, cottage cheese is presented in three varieties: ricotta gentile (that is fresh ricotta), ricotta salata (a salted, pressed and short-aged ricotta), and ricotta montella (a type of ricotta salata, ready to be grated).
